We like the SR-2 Rollsharp so much that we gave it its own category.  This is the sharpener we recommend for all of our double-beveled knives with blade thicknesses less than 3.0mm (basically everything except the single-bevel Japanese-style knives and cleavers).  It also works great on our serrated knives.
